소개
Diners can opt to eat inside, in the stylish, elegant restaurant, or outside with a view of the historical castle grounds. The seasonal food is positively packed with flavours and aromas, and made with top-notch produce – regional wherever possible – such as game that they have hunted themselves or smoked fish from Leinetal. There is also a vegetarian set menu. The service is cordial and professional. Tip: The wine list comprises a broad selection of French red wines, alongside gin, korn schnapps, vodka and whiskey from the restaurant's own Hardenberg Distillery. “Novalis” comes from an ancestor of the owners – it is the pseudonym of writer Georg Philipp Friedrich Freiherr von Hardenberg. Hardenberg BurgHotel promises an overnight stay in tasteful accommodation.
