The food is predominantly vegetarian. The establishment's commitment to ecology and sustainability is reflected in the exclusive use of regional ingredients, primarily sourced from Demeter farms. Fermenting and preserving are also part of their practice – with about 3 000 jars of preserves in stock, their dedication speaks for itself! Some jars are also used as decoration in the restaurant. Tip: The sharing option allows you to sample various dishes. Highlights include the salsify “carbonara” with Parmesan and hazelnut, and yellow carrots with saffron and chives.
